Personal Chef Shares "Good Morning Cookies" That Get the Day Started Right

Good Morning Cookies Makes 24 cookies

1 & 3/4 cups old fashioned oatmeal
1/2 cup flour
1/8 teaspoon salt
1 & 1/4 tablespoons cinnamon
1/2 teaspoon baking soda
1/3 cup cooking oil
1/3 cup applesauce
1 teaspoon vanilla extract
2 egg whites
1/2 cup stevia
1/2 cup raisins
1/2 cup chopped nuts

Preheat oven to 350.
Line a baking sheet with parchment paper.
Place the first 5 dry ingredients in a large bowl.
Using a separate bowl blend the oil, applesauce, vanilla and egg whites, add the stevia and stir until dissolved.
Pour the wet ingredients in to the dry, stir to blend then add the raisins and nuts.
Drop by spoonfuls onto the prepared baking sheet and press flat.
Bake for 7 minutes, rotate the pan and bake for 7 minutes more.
The cookies are done when the edges are light brown and dry to the touch.
