Personal Chef Cheryl Mochau Creates Extra Energy Hermit Bars

1/2 cup granulated sugar
1 &1/2 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
2 tablespoons pumpkin pie spice
1/2 cup apples, minced
1/4 cup raisins, chopped
1/4 cup molasses
1 egg
2 tablespoons cider vinegar
3 tablespoons oatmeal

Preheat oven to 350. Lightly coat an 11"X15" jelly roll pan with non-stick vegetable coating, set aside.

In a large bowl combine the first 5 ingredients, stir well. Add the apples and raisins and coat completely. In a separate bowl combine the molasses, egg and vinegar. Add the wet ingredients to the dry and blend thoroughly. Spread the batter in long rows, 1/4" thick by 2"wide, leaving 2" between the rows. Sprinkle the oatmeal on top and bake for 15 minutes. Cool a wire rack. Cut into bars.
