Biscuits and Gravy, Pt 1

Basic Milk Gravy
3 tablespoons grease
¼ cup all purpose flour
½ teaspoon salt
¼ teaspoon black pepper
1 ½ cups milk
Cook meat (sausage or bacon) to render grease. Measure 3 tablespoons and place back in skillet over medium heat. Add the flour and stir to combine. Add salt and pepper. Cook, stirring constantly, until the flour begins to brown. Add the milk VERY SLOWLY, stirring constantly to break up lumps. I add my milk a little at a time, and make sure it is smooth before I add more.
Cook and stir until gravy thickens. Add crumbled sausage back if making sausage gravy.
