Personal Chef Cheryl Mochau Creates Dish for Leftover Turkey

Turkey & Tomato Curry serves 4

1 cup chopped onion
1 tablespoon minced garlic
1 tablespoon curry powder
14 ounces stewed tomatoes, diced
2 tablespoons chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons ketchup
1/2 teaspoon salt
1/4 cup chopped sweet red pepper
3 cups cooked turkey, cubed or sliced
1/2 cup frozen peas

Brown the onion and garlic in a large skillet over medium-high heat. Add the remaining ingredients except for the peas. Simmer for 20 minutes. Stir in the peas, simmer for 1 minute, remove from the heat. Serve with brown rice.
